The Paper Mills Pub is now run by Thierry, the Head Chef/General Manager and his wife, Bozena. We moved to England from Scotland, although we are originally French and Polish. We opened Le Bistro in September 2014 and moved to the Paper Mills in March 2015. Thierry is an experienced chef who worked with some great chefs in the past. His cooking adventure started when he was only sixteen and since then has grown not only into a proper career, but the passion of his life. However, despite working in some great fine dining restaurants Thierry is a strong believer in good, fresh food which is not only fuel for the body, but also for the soul. The food at the Paper Mills is just that: fresh, locally sourced, simple and delicious! And as always, behind a great man there’s a great woman who keeps an eye on paperwork, staff and most important: on customer service. And that’s Thierry’s wife, Bozena. |
